Apple Crisp w/ Vanilla Ice-cream

I had my in-laws over for dinner last night and this is what I made for dessert. Everyone enjoyed it. I’m thinking of making the apple crisp for breakfast some morning as it is a healthy “dessert.”
This is a recipe that I changed quite a bit to make my own healthful version.

3/4 cup unrefined sugar
1 cup oats
1 cup whole wheat flour
3/4 cup butter, melted
4 cups apples – peeled, cored and chopped
1/2 cup honey or molasses
2 tsp. cinnamon
pinch of nutmeg
Preheat oven to 350 degrees. Butter an 8 inch square pan.
In a large bowl, combine sugar, oats, flour and butter. Mix until crumbly. Place half of crumb mixture in pan. Spread the apples evenly over crumb mixture. Drizzle with honey, cinnamon and nutmeg. Top with remaining crumb mixture.
Bake in pre-heated oven for 40-45 minutes, or until golden brown.
For the vanilla ice-cream see this recipe I posted on an earlier blog. I replaced the strawberries with 1 Tbls. of vanilla extract. Also, as an experiment I replaced 1/2 the sugar with honey in this recipe and it tasted great!
