There are so many versions of Cheeseburger Soup out there, but with each one I’ve tried or reviewed there’s just a little something I’m not pleased with. I finally decided to come up with my own version taking ingredients from two different recipes. One is Bacon Cheeseburger Soup from Paula Deen and the other is Cheeseburger Soup from Taste of Home.

Hope you try it and enjoy!

  • 10 slices bacon, but into 1/2 inch pieces
  • 1 lb. ground chuck
  • 1 onion, chopped
  • 2 tsp. minced garlic
  • 3 cups chicken broth
  • 1 cup milk
  • 1/2 can petite diced tomatoes (total of about 7 oz. of tomatoes)
  • 1 (10.75 oz.) can cheddar cheese soup
  • 2 Tbsp. Worcestershire sauce
  • 2 cups diced peeled potatoes
  • 1/2 tsp. pepper
  • 1/4 cup sour cream
  • Garnish: french-fried onions

In a large Dutch oven or 6 quart sauce pan, cook bacon until crisp; remove from pan, and drain on paper towels. Add ground chuck, onion, and garlic; cook until beef is browned. Drain well. To beef add chicken broth, milk, tomatoes, soup, potatoes, bacon and Worcestershire sauce. Cook for 20 minutes, or until potatoes are done. Remove from heat. Season with salt and pepper, stir in sour cream. Garnish with french-fried onions.

    We make something similar, but without the cheese soup and a lot less ingredients too, we call it Souper burger. Ground beef-browned, diced onions, garlic powder or minced garlic (optional), ketchup, mustard, Campbells vegetable soup, water. Cook on stove until boiling, serve hot. You can add noodles to give it more substance. Very easy, very tasty, and very filling.

    Sounds great Sarah! I will be omitting the cheese soup when I make it this week as well. It *is* quite filling!
