Beef Enchiladas

This is a Taste of Home recipe, but thought I’d repost it here for convenience. The sauce makes a GREAT enchilada sauce for other recipes that call for it.

• 1 pound ground beef
• 1 cup cottage cheese
• 1 can (4-1/4 ounces) chopped ripe olives, drained (optional)
• 2 tablespoons minced fresh parsley
• 1/2 teaspoon garlic powder
• 1/2 teaspoon salt
• 1/4 teaspoon pepper
• 8 flour tortillas (6 inches)

• SAUCE:
• 1 medium onion, chopped
• 1/2 medium green pepper, chopped
• 1 tablespoon vegetable oil
• 1 15 oz can tomato sauce
• 1 4 oz can chopped green chilies
• 2 teaspoons chili powder
• 1/2 teaspoon garlic powder
• 1 cup (4 ounces) shredded cheddar cheese

Directions:
In a skillet, brown the ground beef. Drain. Combine with cottage cheese, olives, parsley, garlic powder, salt and pepper.

Place about 1/3 cup filling on each tortilla; roll up. Place tortillas, seam side down, in an ungreased 13-in. x 9-in. baking dish. For sauce, saute the onion and green pepper in oil until tender. Add tomato sauce, green chilies, chili powder, and garlic powder. Pour over tortillas. Cover and bake at 350° for 30 minutes. Sprinkle with cheese and return to the oven for 5 minutes or until cheese melts.

    Made this for dinner last night. Rebekah hugged me and kissed me. (that means she loved it and i can make it again.) Josiah took leftovers to school. Chrissy said it was good. I liked it and Frank said…It’s ok. Franks menu would include a meat and potato meal, tacos, lasagna, or steak and french fries, or fried chicken. I could alternate those meals every day for a year and he would be happy. He is so boring. I love new stuff. lol
