This cake recipe has been in my family for years. I remember as a child my mom and uncle would alternate who made this cake at family get-togethers. My uncle would add marshmallow cream and my mom would not, so they would argue about who’s tasted the best!

This is not a health food, but I am not against treating myself on occasion, are you!? Good.

 

Blueberry Yum Yum Cake

 

  • 1 box white cake mix, prepared in 2 round cake pans or one 13 x 9. If you use a rectangle pan, after cake is cooled completely, cut the sheet cake in half and stack like you would the round.

For the frosting:

  • 8 oz cream cheese, softened
  • 1 small jar marshmallow cream
  • 16 oz tub of Cool-Whip
  • 1 can blueberry pie filling

With a mixer cream cream-cheese and marshmallow cream together till smooth then fold in Cool Whip.

Spread a very thin layer of the pie filling on to the first layer of cake. Then add frosting to the top only, smoothing to the edges, then put another couple dollops of blue berry filling on top of the frosting, making sure to spread it. You don’t want a big glob right in the center.

Set the 2nd cake on top and repeat withing filling, frosting, and the remaining filling.

Be sure to refrigerate…
