Blueberry Yum Yum Cake

I make something very similar to this cake, but I use fresh strawberries and tear up the cake and layer in a trifle bowl. It’s basically a strawberry shortcake trifle, but my husband calls it Strawberry Yum Yum. Silly name, but it has stuck! So I thought I’d fancy up the name of this cake to Blueberry Yum Yum cake. :)

This cake recipe has been in my family for years. I remember as a child my mom and uncle would alternate who made this cake at family get-togethers…My uncle would add marshmallow cream and my mom would not, so they would argue about who’s tasted the best!

This is not a health food, but I’m not against treating ourselves on occasion, are you!? J Good.

Blueberry Yum Yum Cake                    

·         1 box white cake mix, prepared in 2 round cake pans, cooled

For the frosting:

·         8 oz cream cheese, softened

·         1 small jar marshmallow cream

·         16 oz tub of Cool-Whip

·         1 can blueberry pie filling   

Cream cream-cheese and marshmallow cream together till smooth then fold in Cool Whip.

Spread frosting over the 1st cake. Pour ½ of pie filling on top, make sure it’s spread around some. You don’t want a big glob right in the center J
Set the 2nd cake on top and spread on the rest of the frosting (sometimes I will have some filling leftover, it’s not an exact science, but that’s ok with me as I LOVE to eat the frosting! YUM!) Then pour on the rest of the pie filling.

Voila! You’re done!
