Breakfast Challenge: Day 6

Well, mine and Joy’s Breakfast Challenge is almost over. I am really looking forward to seeing what you fixed for breakfast this week. The challenge was really one I needed to stay accountable. At least 2 mornings I was so tempted to fall back on the ole standby – peanut butter sandwiches.

Yes, I am a horrible mom – wait…I WAS a horrible mom. That all changed this week. I made breakfast every morning, whether I felt like it or not. {patting myself on the back} And for the record: we did not sleep in ’til 8 a couple of mornings and it was NOT 10 o’clock before we ate breakfast today. Whew. Relief. Don’t want you all going off spreading rumors about me now…

Today I made Apple Crisp. It is a recipe I have already posted here. But for convenience sake I will repost it.

  • 3/4 cup unrefined sugar
  • 1 cup oats
  • 1 cup whole wheat flour
  • 3/4 cup butter, melted
  • 4 cups apples – peeled, cored and chopped
  • 1/2 cup honey or molasses
  • 2 tsp. cinnamon
  • pinch of nutmeg

Preheat oven to 350 degrees. Butter an 8 or 9 inch square pan.

In a large bowl, combine sugar, oats, flour and butter. Mix until crumbly. Place half of crumb mixture in pan. Spread the apples evenly over crumb mixture. Drizzle with honey, cinnamon and nutmeg. Top with remaining crumb mixture.

Bake in pre-heated oven for 40-45 minutes, or until golden brown.

Apple Crisp is technically a dessert. But I felt as if it could also double as a breakfast dish. It’s my recipe and I can do as I want to. If you’d like to turn this into a dessert, serve this with vanilla ice cream and coffee {or not, either way}.

The only time consuming step was peeling and chopping the apples. Not too difficult. Therefore I will be adding this one to my master list as well.

Tomorrow is Sunday and it is a very rushed morning for us and a morning I hate to prepare anything for. I anticipated this when I planned my Breakfast Challenge Menu and decided on overnight crockpot oatmeal. Can’t get any easier than this. Well, actually it can…remember the peanut butter sandwiches? Oh…you’ve forgotten already!? Good.

Looks as if Joy and I had a hankering for oatmeal because that is what her family had this morning too! Go check out her unique recipe pairing peanut butter {oh why do you haunt me} and oatmeal.

    What a great idea to do apple crisp! I have just recently started making breakfast for my kids–they usually just would get their own. I never would have thought of this, but I think they would like it.
