Breakfast Challenge: Day Four

I was rushed this morning because of an unexpected appointment, but was determined to fix what was on the menu – Piggy Pudding.

Other than clean up, I was able to prepare breakfast before heading out the door.

This is another old recipe of ours that I often like to prepare for company. Piggy Pudding is different enough that most are intrigued and all seem to like.

Piggy Pudding

Ingredients

  • 1 package link sausages – mine came in a 12 pack
  • 4 apples, peeled and sliced
  • 1 box 8.5 oz Jiffy corn muffin mix – prepare according to package

Cook sausages in skillet until done. Drain. Place sausage links in the bottom of a greased 2 quart baking dish. Layer apples on top. Pour muffin mixture on top. Bake for about 30 minutes or until lightly brown. Serve with maple syrup.

After I had cooked the sausage and sliced the apples I realized I didn’t have an egg for the Jiffy mix! I quickly Googled what substitutions there were for eggs. I found out that bananas are a good substitution. So in place of an egg this time I used a banana with great results. Other egg substitutes I found were:

  • 1/4 cup mayonnaise*
  • 2 Tbsp corn starch*
  • 2 Tbsp potato starch*
  • 1 Tbsp soy powder plus 2 Tbsp water*

*per egg

Joy is off camping with the family for tomorrow’s breakfast but even then she’s got a plan!
