Breakfast Challenge: Day Two

On the menu for this morning’s breakfast was Chocolate Chip Breakfast Biscuits. The children were so excited that I was making “cookies” for breakfast. While they weren’t cookies they were certainly just as yummy, especially with a little butter spread on. Yum!
The recipe came from Kate over at Stolen Moments Cooking. Kate has many tried and true recipes to choose from. I love to browse her blog to get ideas for my menu planning.
The only 2 “changes” I made to the recipe – I used all whole wheat flour ground on the pastry setting and used a combination of semi sweet & milk chocolate chips.
Chocolate Chip Breakfast Biscuits
- 3 c. flour – I used whole wheat flour with great results.
- 1/3 c. sugar
- 1 1/2 T. baking powder
- 3/4 t. salt
- 1/2 c. butter
- 1-2 c. chocolate chips – I used 1 cup semi chocolate chips and 1 cup milk chocolate chips
- 1/2 – 1 cup milk
1. In a large bowl, mix together flour, sugar, baking powder and salt. Cut butter into the flour mixture until crumbly. Stir in chocolate chips.
2. Add the milk, a little at a time, just until dough comes together. If you accidentally add too much milk and the dough becomes sticky, just add a little more flour. I found I needed to use the whole cup of milk.
3. Roll out dough to about 1/2 – 3/4 inch thick and cut or you could do like Kate did and just drop 1/4 c. portions onto a baking sheet for drop biscuits.
4. Bake at 425 degrees for 10-15 minutes, until fully cooked and lightly browned on top.
While we loved this recipe and it will make the master menu, I will save it for mornings we are not rushed because of the prep time and clean up. Chocolate Chip Breakfast Biscuits is one of those recipes you’ll love to pull out when having company for breakfast!
To make this a more balanced meal I also threw in some grapes, apples, and a glass of milk. All in all it was a huge hit and got rave reviews!



We all had 2 apiece (except for hubby who ate THREE and took TWO to work for break time) and had a few left over for snack time. Around here snack time = lunch time for mom. I enjoyed one with a cup of coffee for lunch.
Tomorrow’s breakfast? Layered breakfast bowls w/ cheese grits, sausage, scrambled eggs. This is a favorite, hearty breakfast that I don’t prepare often enough. There are never left-overs!

Okay, I love grits! We’re on our way over right now…you don’t mind if we’re still in our pj’s and have morning breath do you? I’m kidding, I would never just drop in on you like that…but I had pondered it!
