Crock-Pot Pork Chalupas
April 20, 2009 > No Comments
In heavy kettle or crock pot mix:
1 lb. dry pinto beans, soaked overnight and drained (if you soak with an acid such as lemon juice or apple cider vinegar, then rinse it WILL cut down on the gassiness of the folks eating it! ![]()
3 lb. lean pork roast
1/2 cup chopped onion
2 minced garlic cloves
1 TBS. salt
2 TBS. chili powder
1 TBS cumin
1 teaspoon oregano
1-4 oz. can green chilies, chopped
7 cups water
Cover and simmer for 5 hours, or 10 hours on low in the crock pot, or until meat falls apart and beans are done.
Remove bone (if you have one) from the meat and mash beans.
Uncover and cook about 1/2 hr or until desired thickness.
Serve over a plate of corn chips or Tostitos, or in warm flour tortillas and pass the toppings!!
Toppings:
chopped tomatoes, chopped avocado, chopped fresh onions, shredded cheese, lettuce, olives, taco sauce, sour cream, you get the idea…
This recipe makes a LOT! Can easily serve 12+ hungry folk or is great as left-overs!

This sounds good, and I am glad it has pork in it. People and thier misconceptions about swine flu. My husband is not a fan of Mexican, but he is a fan of pork so I might modify the seasonings in the recipe, or just make it for myself. It looks like it will freeze well.

Sounds great. We use a lot of dry beans because they’re inexpensive and make substantial meals. Thanks!
