Feta Bruschetta

This is a very delicious, healthy appetizer recipe that I first saw on Pinterest. We fell in love with it and I make it quite often as a side dish with supper. Leftovers are just as good and we will eat it along with our lunch.
I am including the measurements that I use, but feel free to vary it according to your tastes. The recipe below makes a nice platter full and should be plenty for a single family to eat as an appetizer or side dish.
If you are serving for a party, just use a larger platter and double the ingredients!
Feta Bruschetta
- ½ block Feta cheese – 4 oz
- 2 Roma tomatoes, chopped
- 4 green onions, chopped
- ½ cup extra virgin olive oil
- 1 ½ Tablespoon Cavendar’s Greek seasoning – find this in the spice section of your grocery store
- Crusty baguette or some other yummy, crusty bread
In a medium-large sized platter with a slight lip or raised edge, add your olive oil. You will want a platter that is just slightly larger than a dinner plate for these measurements.
Add and evenly distribute the chopped green onions and tomatoes. Crumble the Feta.
Then sprinkle on the Greek seasoning. Stir gently.
Dip, scoop, or serve with a spoon.
