Menu ~ April 20th

I posted my menu last week to cover through this Thursday, so a couple of these dishes will be repeated for looks sake. Dearest is paid every week, therefore the menu I plan is made for pay-day through to pay-day, Thursday – Thursday.
BREAKFAST:
Money is very tight lately so I have been trying to skimp on every meal I can. These are the things I already have in the pantry.

Oatmeal
LUNCH:

PB & J Sandwiches

Leftovers
WEEK-NIGHT SUPPERS:
While I stick to my menu for the most part every week, I don’t always prepare the meals on the days I say I will. I think I’ll just leave off the days of the week for now. 2 of the meals from last week had enough leftovers for another meal so I was able to carry over

I would have liked to have had ham, but pork chops were on sale this week, so I’ll make 2 meals using pork chops. No complaints here! Pan-fried pork chops, garlic mashed potatoes, green beans, rolls.

Breakfast / sausage pre-cooked the day before, scrambled eggs w/ cheese, corn grits, hashbrowns, drop biscuits

Pork Chop and Potato Casserole w/ homemade cream mushroom soup, green beans

Last week we tried PW’s chicken sandwich. The dearest loved her husband’s second favorite sandwich so much he begged and pleaded on hands and knees requested I make Marlboro Man’s Favorite Sandwich. While I’m at it I’ll go ahead and make her roasted potatoes. And baked beans.

It’s been over a year since I’ve made Pork Chalupas, but they are always a huge hit! The kids asked if I would make them again, so here they are!
