Hope everyone enjoyed their Mother’s Day week-end!
Hope you all can join me over at Happy to be at Home this week. My kitchen is the “Kitchen of the Week” and I’ll be blogging about the goings on in my kitchen. I’ll be posting a lot of new recipes here at Better is Little, so I hope you’ll come back often!
In the meantime here’s what we’re eating this week.
Breakfast
· Whole Wheat Banana Millet Muffins (a staple breakfast, snack food around here)
· Oven Apple Pancake (recipe Tuesday!)
· Cheese toast with fried eggs
· Piggy Pudding (recipe coming sometime this week!)
· Cheesy grits
Lunch
With my husband’s work schedule (2nd shift through the week & 3rd shift on the week-ends) lunch is our main meal. The kids and I generally eat light for supper, usually leftovers.
· Lasagna, salad, breadsticks (Had this on the menu last week, but got bumped off. We celebrated Mother’s Day early!)
· Marlboro Man’s 2nd Favorite Sandwich, baked potato wedges, baked beans (We’ve already tried this and my hubby has requested that I make this often! We liked this better than his 1st favorite!)
· Meatloaf, mashed potatoes, green beans or peas, gravy, deviled eggs (My husband’s sister is coming in from out-of-town so I’d like to have her and the grandparents over)
· Shepherd’s Pie
· Leftovers
Supper
· Sandwiches, fruit, raw veggies
· Leftovers
· Chicken quesadillas, popcorn
· Pinto beans and cornbread
Dessert
· Whole Wheat Chocolate Chip cookies (new and improved recipe!)
· Homemade Ice Cream, chocolate & PB, vanilla, or strawberry
