Menu Plan Monday: The Lunch Challenge

Last week Joy at Five J’s and I challenged ourselves to prepare breakfast for our families every morning. While there were a few bumps along the way, we have both declared the week a success and are looking forward to our challenge this week – The Lunch Challenge!
While our Breakfast Challenge is over, we’re still hoping you’ll link up your favorite breakfasts here so we can have more options to choose from when we make our master menu plan at the end of the month.
This week should be pretty normal for us. While we are always busy, there are no activities or appointments this week that will prevent us from preparing a quick lunch.
- Monday – Peanut Butter Banana Smoothies, pigs in a blanket, chips, carrots & dip
- Tuesday – Taco Stuff – Honestly that’s what we call it! Stay tuned for the recipe!
- Wednesday – Chicken sandwiches (prepackaged chicken patties in the freezer section), french fries and baked beans
- Thursday – Homemade Pizza – I made Lynn’s pizza sauce last week and it was SO good! And here’s the pizza crust I want to try next.
- Friday – Leftovers – I’m sure I’ll have leftovers at some point this week we’ll need to eat up.
- Saturday – Black Bean and Ham Soup
- Sunday – Baked Potato Bar – Baked potatoes cooking while we’re at church served with a variety of toppings and a salad
I’ll admit that my menu looks a tad involved for most of us stay-at-home-mamas, but my husband often eats lunch with us. He’s not very fond of dining on the odds and ends in the fridge or pantry that the children and I are so ravenous for. {interject sarcasm here} Often times our lunch is more involved that our supper, and we eat leftovers from lunch for our evening meal.
Joy and I both will be posting updates each day about how our Lunch Challenge is progressing. You’re also welcome to join us in this challenge. Just focus on preparing a lunch each day this week. Then stop back by here next Monday and link up your lunch recipes. Even if you don’t join us in our challenge, we encourage you to link up your recipes. We’d love to have some more recipes to choose from to add to our master menu plans at the end of June.

Now that school is out, I should put myself on a lunch challenge too. Thanks for the idea… now I’m off to check out your breakfast challenge!

I have been meaning to find some smoothie recipies to make the kids for lunch. What do you use?
