Mini Corn Dogs

I have recently stumbled across this easy lunch or snack idea that is a huge hit with my children (and myself). Mini Corn Dogs are great for a quick snack or as a yummy lunch served with french fries. It’s so easy that your children, depending on their skills in the kitchen, can even make this to give Mom a much deserved break!
You’ll need:

Cut hot dogs into 1/2 inch pieces. Don’t go by my pictures to judge size. I just can’t get 1/2 an inch – mine always turn out to be an inch at least!

Place hot dogs in a mini muffin tin. This recipe makes 24.

Prepare corn muffin mix according to package directions.


Spoon mixture over hot dogs, being sure not to overfill.

Bake until lightly browned.

Call the kids and Enjoy!

You are my hero! I’ve been trying to figure out how to do this, I just knew there was a way but never thought of the muffin tin.
I have so many packages of corn bread mix and hotdogs I’ve gotten free with coupons. Hubby and son loves corn dogs and I don’t have to find sticks!
