Today’s lunch was another quick and easy, yet tasty meal perfect for impromptu visits or anytime you need to put something on the table in a flash.

For my “real food” friends, this is not the meal for you. You will forever be disappointed in me. Everything I made today was totally processed convenience foods. However, you could adjust this to be a whole foods meal although it probably wouldn’t be as quick and simple.

On the menu for today was chicken sandwiches, french fries, and baked beans. Doesn’t sound very interesting does it? Being a fan of foods being semi-homemade, I doctored it up!

Every dish in this meal can be put in the oven at the same time and the cooking times for each are similar. The only dishes you will dirty are 2 cookie sheets and one casserole dish. The pans can even be covered with aluminum foil making it an even easier clean-up.

For the chicken:

Pre-heat oven to 400 degrees.

Place the chicken patties on the pan.

For the fries:

Place your choice of fries – tator tots, crinkle-cut, steak – on the other pan. Sprinkle with season salt. I like Lawry’s.

For the beans:

Any brand of beans

1/2 cup ketchup

1/4 cup mustard – my favorite to use is whole grain Dijon mustard. but I didn’t have any.

1/4 cup barbecue sauce

few dashes of Worcestershire sauce and hot sauce

Spices – salt, pepper, garlic powder

Pour beans into a shallow casserole dish. I use a glass bread pan so it will fit in the oven with the 2 cookie sheets.

Add in all ingredients listed. Mix well.

Place all 3 dishes in the oven and cook for about 30-45 minutes or until done.

When the chicken patties are done go ahead and place them on the buns with cheese and put back into the bag. It will make the buns soft and warm. We do this when grilling out hot dogs and hamburgers too. Dress up your chicken sandwich with lettuce, onion, mayonaise, and tomato.

Don’t forget to check in on Joy and see what she fixed her family for lunch today.

Tomorrow’s lunch? Homemade Pizza.
