			<content:encoded><![CDATA[<p>On those rare occasions when I need a quick meal, it <a href="http://www.wearethatfamily.com/">Works for Me</a> to have an <strong>easy-to-fix  meal</strong> that calls for ingredients I already have in my pantry.</p>
<p>Despite its boring name, Taco Stuff fits that description. <strong>This cooks up quickly with very little clean-up &#8211; perfect for unexpected company or even after church on Sunday.</strong> Mexican food is a favorite around here, and I guess this is probably my most requested dish.</p>
<p>When I was making up this week&#8217;s Lunch Challenge menu I asked if anyone had a meal they&#8217;d like to see on the menu and &#8220;your Taco Stuff&#8221; was the only meal requested (except for Peanut Butter and Banana Smoothies which I had on the menu for yesterday).</p>
<p>Here&#8217;s my simple, quick recipe for Mexican Taco Stuff and please &#8211; feel free to leave a comment giving me suggestions as to a better name for this quick, simple, yummy, Mexican, taco stuff!</p>

<li>1 lb hamburger meat (cooked and drained)</li>
</ul>
<ul>
<li>1 15 oz can refried beans, black or pintos</li>
</ul>
<ul>
<li>Spices &#8211; chili powder, cumin, garlic/onion powder, salt, pepper. Also a great time to use up any leftover taco seasoning packs.</li>
</ul>
<ul>
<li>Tortilla chips</li>
</ul>
<ul>
<li>Toppings &#8211; cheese, lettuce, tomatoes, salsa, sour cream etc.</li>
</ul>

You may have to add a 1/2 cup or so of water because the mixture will be very thick. I have never measured the spices, but season to taste. It is very hard to put too much, so don&#8217;t be shy. Throw in a tablespoon of chili powder and any other spices your family likes and enjoy the feeling of being a bit bold!</p>

<p>To assemble &#8211; place a dollop on the center of your plate (technically you could put it on the side, but it might fall off and it certainly wouldn&#8217;t look as purty). Then pile on the toppings. There&#8217;s no wrong way. Arrange chips around your creation. Eat. Enjoy.</p></blockquote>

<p>I usually double or triple this recipe so I can be assured to have left-overs. It&#8217;s a great option when you want to have an &#8220;everyone fend for yourself&#8221; meal.</p>
<p>Tomorrow is a church night and I always try to keep it simple with very little clean up. So we&#8217;ll be having chicken sandwiches with fries and baked beans. Not really a recipe, but I&#8217;ll give you several tips to make this easy meal stand out.</p>
