The Breakfast Challenge: Day Three

We got an earlier start on breakfast today thanks to the children. They managed to get up, dressed, have personal devotions AND get all their chores done by 8 o clock this morning! I was very proud of them and am hoping that this is a new feat I’ll be seeing more of.

Since I have a 5 gallon bucket full of corn grits I like to have at least 1 meal a week that incorporates grits into our menu. This morning we had Layered Breakfast Bowls, for lack of a better name.

I like this breakfast because I can use up bits of cheese, breakfast sausage ends, and eggs. Of course I have also bought the ingredients just to be able to make this dish because it is one of my children’s favorites.

What you need

  • Grits – The amount depends on the size of the group you’ll be feeding. For my family of 7 I prepare 1 1/2 cup of grits
  • Sausage – as much or as little as you’d like to use
  • Scrambled eggs – I usually scramble 1 egg for each person, but this morning we only had three eggs so we were a little short this time.
  • Cheese, butter, a little cream or milk, salt and pepper

No real recipe or secret here!

  1. Fry and scramble sausage. Sometimes I scramble the sausage the night before to make it a bit easier to prepare in the morning.
  2. Prepare grits according to package directions. Add a little milk and a lot of butter to create a creamy consistency. Then add shredded cheddar cheese. I usually put the same amount of cheese as grits. So I made 1 1/2 cups of grits, I added 1 1/2 cup cheese. Throw in a dash of salt and pepper to taste.
  3. Scramble eggs.
  4. In individual bowls layer egg, sausage & grits.

Easy enough!

Of course if you’re not a “grits person” ie. northerner who puts sugar in their grits {gasping in horror} you may not like this recipe. But may I suggest as Mikey in the old Life commercial said, “Try it you’ll like it.”

    I have to say the timing of this challenge is ironic. I feel like I’ve fallen off the “breakfast bandwagon” by serving a few too many milk-and-cereal breakfasts as of late. To complicate matters, I work outside the home full-time and only cook on weekends or evenings. And I cook vegan vegetarian food (and it’s hard to find time to veganize/ vegetarianize recipes). But happy for me, I just discovered a newly-released vegan brunch cookbook that I ordered a couple days ago. I hope I can get back on the bandwagon! Thanks for the motivation. :) (I don’t think I’ll be able to join up this coming Monday as I’ll be out of town, but maybe another time.)
