The Lunch Challenge: Day 1

Well, I’m a bit late with getting day 1 of the Lunch Challenge posted. I was not feeling well yesterday. Then we traveled out of town for a special meeting. By the time we got home at 10 o’clock I was wiped out and went straight to bed. Thankfully I woke up well rested and ready for a new day.
Because we had to leave around 2 pm for our trip I had planned an easy quick lunch of Peanut Butter Banana Smoothies (a new favorite around here), fruit, carrots and chips. It was enough to fill us up until supper a few hours later – an enjoyable meal at a Bar b Q restaurant.

Today I’ll be fixing our “Taco Stuff” – perhaps after I post today you’ll be able to suggest a better name!
