The Lunch Challenge: Day 2
June 10, 2009 > 9 Comments
On those rare occasions when I need a quick meal, it Works for Me to have an easy-to-fix meal that calls for ingredients I already have in my pantry.
Despite its boring name, Taco Stuff fits that description. This cooks up quickly with very little clean-up – perfect for unexpected company or even after church on Sunday. Mexican food is a favorite around here, and I guess this is probably my most requested dish.
When I was making up this week’s Lunch Challenge menu I asked if anyone had a meal they’d like to see on the menu and “your Taco Stuff” was the only meal requested (except for Peanut Butter and Banana Smoothies which I had on the menu for yesterday).
Here’s my simple, quick recipe for Mexican Taco Stuff and please – feel free to leave a comment giving me suggestions as to a better name for this quick, simple, yummy, Mexican, taco stuff!
- 1 lb hamburger meat (cooked and drained)
- 1 15 oz can refried beans, black or pintos
- Spices – chili powder, cumin, garlic/onion powder, salt, pepper. Also a great time to use up any leftover taco seasoning packs.
- Tortilla chips
- Toppings – cheese, lettuce, tomatoes, salsa, sour cream etc.
After scrambling and draining your hamburger meat, mix in refried beans and spices and heat through. You may have to add a 1/2 cup or so of water because the mixture will be very thick. I have never measured the spices, but season to taste. It is very hard to put too much, so don’t be shy. Throw in a tablespoon of chili powder and any other spices your family likes and enjoy the feeling of being a bit bold!
To assemble – place a dollop on the center of your plate (technically you could put it on the side, but it might fall off and it certainly wouldn’t look as purty). Then pile on the toppings. There’s no wrong way. Arrange chips around your creation. Eat. Enjoy.

I usually double or triple this recipe so I can be assured to have left-overs. It’s a great option when you want to have an “everyone fend for yourself” meal.
Tomorrow is a church night and I always try to keep it simple with very little clean up. So we’ll be having chicken sandwiches with fries and baked beans. Not really a recipe, but I’ll give you several tips to make this easy meal stand out.
Joy and I both will be posting updates each day about how our Lunch Challenge is progressing. You can see her Lunch Challenge results here at Five J’s.
You’re also welcome to join us in this challenge. Just focus on preparing a lunch each day this week. Then stop back by here next Monday and link up your lunch recipes. Even if you don’t join us in our challenge, we encourage you to link up your recipes. We’d love to have some more recipes to choose from to add to our master menu plans at the end of June.
Also, we’re still hoping more of you have breakfast recipes to share with us. Please link up your favorite recipes here!
