The Lunch Challenge: Day 5

Today was an enjoyable day running errands with the children. After errands we went through the drive through at McDonalds and took our lunch to a local park. The weather was wonderful and made me wish we could do that every day!

But because I had pizza on the menu for lunch yesterday and I didn’t deliver, I knew I couldn’t do that again today. So once home I started preparations for supper – homemade pizza.

For the crust I used this recipe at All Recipes. Rather than make this by hand as the recipe suggests, I mixed the dough up in my Kitchen Aid mixer and let it rise. I used 100% whole wheat with great results. It took about 1 1/2 hours from start to finish. But while the crust is rising is a good time to prepare your toppings.

For the toppings I scrambled hamburger meat and sausage to go along with pepperoni and cheese of course.

The sauce posted by Lynn’s Kitchen Adventures is THE best pizza sauce I’ve ever had. I made it a while back so I already had some in the freezer. The recipe makes enough for 4 medium/large pizzas. It would even make a great sauce for spaghetti, bread stick dip, or anything you’d need a marinara sauce for.

When the dough has risen, continue to follow the directions given. I did not let my dough rise in the pan as suggested because I wanted a thinner crust, but I did pre-bake it for about 5 minutes.

Once pre-baked layer your sauce, toppings and cheese and bake for about 15 minutes or until cheese is bubbly and crust is brown.

Homemade pizza is a hit with everyone and while we still like an occasional take out pizza, it’s not always in the budget. It took me years to venture outside my box and make pizza dough. Honestly, it’s not hard at all and I encourage you to try it!
