The Lunch Challenge Link-up

Well, this week could have been a bit more successful perhaps, but life happens and life usually doesn’t wait for us to schedule and organize it.
But let’s not focus too much on the lunches I didn’t prepare, rather let’s take a quick look at what we did eat this week.
Monday – Because of an out of town trip we only needed something to tide us over until an early supper so I made Peanut Butter Banana Smoothies with carrot sticks. These smoothies are the most requested recipe I’ve made recently. It will be going on the master plan for sure.
Tuesday – I made our favorite Mexi Mess. Thanks to Veggie Mom of 2 for naming this yummy dish for me! I almost always triple this recipe so we’ll have plenty of leftovers for the next meal and this time was no exception. Not only did we have enough leftovers for supper that night but for Thursday’s lunch as well.
Wednesday – Friends of ours inspired this totally processed meal of Chicken Sandwiches, seasoned fries and semi-homemade baked beans. While it’s not the healthiest of meals, it certainly is tasty.
Thursday – As I said earlier, we had leftover Mexi Mess for lunch.
Friday – Homemade Pizza was to have been Thursday’s lunch but it got bumped to Friday. While I probably could use a tutorial for rolling and shaping the pizza dough, the taste was just fine. And the sauce from Lynn’s Kitchen Adventures is the best homemade marinara/pizza sauce I’ve ever made. So I will bookmark both recipes for future pizza nights.
Saturday – We all woke up to the yard needing mowing and the weeds taking over our vegetable garden. I spent the whole day and evening hours outside mowing and weeding, so lunch was fend for yourself. While I didn’t prepare lunch or supper as planned, we didn’t starve and a whole lot of work got done!
Sunday – I put baked potatoes in the oven this morning before church and set the oven on 200 degrees. When we got home several hours later the potatoes were done and all I had to do was fry up a pound of bacon and set out the other toppings – butter, sour cream, cheese, salt and pepper. For us this is a great Sunday afternoon lunch.

I had never thought to bake potatoes in an oven on a lower temperature. My oven doesn’t have a timer so it’s hard to put things in before we leave for church to be ready several hours later when we get home. I’ll have to remember and try out the baked potatoes!
