The Supper Challenge: Day 1

Today I had a few errands to run, but other than that we pretty much took the day off. The children and I had cleaned the house last night after church so there was very little tidying to do.
Because it was our day off I didn’t want to spend very much time in the kitchen. I only had a few items in my pantry already that would be considered quick and easy and I fixed those today. Therefore, the rest of the week I’ll have to cook if we want to eat whether I want to or not.
I resorted to peanut butter sandwiches for breakfast and lunch was egg and cheese sandwiches. By the time supper rolled around I was exauhsted from doing nothing all day. Thankfully I had just enough Hot Pockets for everyone to have one served with a smoothie.
Tomorrow I plan on making a simple 5 ingredient recipe I found in a church cookbook – Mordecai’s Chicken.
