The Supper Challenge: Day 2

Supper tonight was a quick throw together meal which is good because I had several errands to run and a piano lesson late in the afternoon.
I found the recipe for Mordecai’s Chicken in a church cookbook Come and Dine put out by Antioch Baptist Church in Knoxville, TN. A year ago I was flipping through it and the ingredients for this recipe were such common pantry items that it drew my attention.
I’ve since made Mordecai’s Chicken a dozen times or more. My 7 yr old even requested it for his birthday meal. To round out this meal you could serve with french bread and a salad.

Mordecai’s Chicken
3 chicken breasts, diced
2 packets dry Italian dressing
1 box thin cooked spaghetti
1/2 cup olive oil
3 Tablespoon soy sauce
Start the water for your spaghetti noodles. Cook according to directions.
While spaghetti is cooking saute chicken in olive oil. I usually use frozen chicken tenderloins so I cook the tenderloins in the oil. Then just before I add the other ingredients I cut the chicken into bite size pieces.
Add dressing packet and soy sauce.
When spaghetti is done; drain and add to chicken mixture. Stir to coat. If you need a bit more “sauce” add more soy sauce and oil.
