The Supper Challenge Recap and Link-up

Wow, what a crazy week. I feel as if I was in a daze through most of it. A couple of days I didn’t feel well then the other days was full of different activities. Because of that supper this week was not everything I had planned, but I don’t believe anyone went hungry. I was also challenged this week by a small grocery budget. By eating leftovers, smoothies and eating out of the pantry/freezer I was able to stay within my budget.

Here’s what we ended up having this week for supper:

Monday – This was our day off, so I tried to keep the meals simple and easy. We had smoothies and Hot Pockets.

Tuesday – Mordecai’s Chicken is an easy 5 ingredient meal that I almost always have the ingredients on hand for. The only ingredient I needed for this meal was the dressing packets and a loaf of french bread. This is a family favorite so it will for sure go on my monthly menu plan.

Wednesday – Another meal that is a keeper is Amy’s Finer Things Desperation Dinner. It was SO good and SO easy! My husband was skeptical at first, but after the first bite he was sold!

Thursday / FridayBlack Bean and Ham Soup was a twist on a dish we often have. My family loves beans and a pot of beans with cornbread is a common meal around here. I loved the combination of spices and ham adds so much flavor. The soup also made enough for lunch and supper Friday night and because we were eating frugally this week I took advantage of this.

Saturday / Sunday – Our former church had a Father’s Day cook-out and we enjoyed grilled burgers and hot dogs with all the fixings. They sent us home with plenty of leftovers which provided enough food for us to stretch through to supper Sunday.

    As much as I love this challenge I just can’t seem to pull it together enough to participate! I can’t wait to see your meal plans when you are done!
